We had a delicious dinner tonight and the recipe is courtesy of my long lost sister (okay, so we're really not related but I think we're twin souls). The recipe is as follows:
Ingredients:
1 lb hamburger
1 onion - chopped
1 can corn (do not drain)
1 can kidney beans (do not drain)
1 can diced tomatoes (do not drain)
1 packet Taco Seasoning (I used low sodium)
Sour Cream
Shredded Cheese
Tortilla Chips (or Fritos)
Sautee the chopped onion in some EVOO then add the hamburger. Brown the meat then drain the excess grease. Add the corn, kidney beans, tomatoes and Taco Seasoning. Stir together and bring to a boil. Once boiling, reduce heat to medium low, cover and simmer until heated thoroughly. Remove from heat and serve. Top with sour cream, cheese and chips.
It doesn't get any easier than that, huh? Thanks for the idea my dear, sweet friend!!
